Milk Thistle is a tall, spiny plant with distinctive white-marbled leaves, native to the Mediterranean and now cultivated worldwide. In Europe, the de-spined leaves were traditionally eaten as a vegetable green, cooked much like spinach, and used in a milder, more everyday way than the plant's seed. While the seed is prized as the concentrated source of silymarin — the plant's most active liver-supporting compound — the leaf carries its own gentler traditional reputation, valued as a mild everyday tonic and bitter green rather than the plant's primary medicinal part.
