The plant is also cultivated in South Asia, Africa, Australia, and in the more temperate regions of the U.S., such as Florida, Georgia, and South Carolina. However, most of the commercially grown arrowroot of high quality is sourced from the island of St. Vincent. While etymologists continue to debate the exact origin of the word arrowroot, it is clear that the name is closely related to the original inhabitants who dominated the land now recognized as Haiti and the Dominican Republic since the 7th century. Unfortunately, with the arrival of the Europeans in the 15th century, the Taíno Indian population vastly declined, possibly progressing to the point of annihilation, as some experts believe. However, among many other legacies, these indigenous people left us with considerable knowledge of this herb, which they regarded as a culinary staple. For that matter, many language experts believe that the word arrowroot may be a distortion of aru-aru, which translates from the Arawakian language to mean “meal of meals.”

English households became acquainted with arrowroot by the early 1730s, when the powdered rhizome was often combined with water to make a substitute for mother’s milk for infants and, later, to encourage weaning from the breast. Older children enjoyed arrowroot dissolved in boiled milk as an alternative to farina. At one time, arrowroot played an important role in the early history of the papermaking industry. For instance, 19th-century photographers eventually came to prefer the quality and color rendered on paper coated with a thin layer of arrowroot starch and sodium chloride (table salt) diluted in water, as opposed to traditional albumen-treated paper.

Arrowroot powder was also a key ingredient used in producing the first carbonless copy paper. Today, arrowroot powder is primarily used to thicken foods and as a healthier substitute for talc in cosmetics. In fact, it is very similar in appearance and consistency to cornstarch.

We have also learned that arrowroot powder isn’t as nutritious as once thought. In fact, it is composed of little more than carbohydrates. Flour made from arrowroot starch is the perfect alternative for wheat flour when making baked goods. As such, it is still used today to make biscuits and cookies for teething infants and adults with digestive issues. Using arrowroot powder instead of other starches in cooking offers additional advantages. For one thing, acidic ingredients have no effect on arrowroot, which makes it highly suitable for making clear jellies, glazes, and fruit sauces.

Arrowroot also thickens foods at much lower temperatures than other starches without altering the food’s color or taste. It also holds up to freezing. In fact, when added to homemade ice cream, arrowroot prevents the formation of ice crystals. Arrowroot is also the preferred thickening agent when preparing meat pies, à la king, and other sauce- or gravy-laden dishes intended to be frozen and reheated later. The consistency of the dish will stand up beautifully to being reheated. In contrast, using other thickeners often produces unsatisfactory results when attempting to go from freezer to oven.

Generally, one teaspoon of arrowroot powder is equivalent to one tablespoon of wheat flour, and two teaspoons of arrowroot powder equal one tablespoon of cornstarch. In addition to the foods mentioned above, arrowroot may be used to thicken pie fillings, custards, puddings, dark hot sauces, and, of course, to make cakes, cookies, and other baked goods. Like other starches, arrowroot should be made into “a slurry” when thickening sauces and gravies – that is, mixed with a cool liquid before adding to a hot liquid. However, the arrowroot-thickened food should be removed from the heat immediately, whereas foods thickened with cornstarch or flour typically have to be returned to a boil to thicken.

Arrowroot is an excellent component to use in your herbal powders. The conversion of willow bark to aspirin began in 1828 when German chemist Felix Hoffmann isolated the active ingredient and named it salicin. In 1899, the Bayer company began manufacturing and selling a modified form of the willow bark chemical acetylsalicylic acid, or aspirin. A Spanish doctor named Nicolas Monardes was the first to document the flower used in Peru in 1569, which he then brought back to Spain, where its popularity spiked rapidly as a sedative. Enjoy a truly euphoric bathing experience by combining these all-natural salts with dried herbs, flowers, and essential oils. Our sea salt is perfect for use by individuals, spas, and for manufacturers of high quality bath and body care products. It is suitable for food and cosmetic use. Today salt is universally available, but historically this was not the case. In the past, salt was used as a method of food preservation, flavoring agent, in pottery, religious rituals, and for medicinal and nutritional properties. It has served as money at various times and places, been the objective of major explorations, and it has caused bitter warfare.

Salt was used around the world by many different cultures, including the ancient Romans, Egyptians, Hebrews, and Greeks. Documents have even been recovered in China from 2,700 BC that discuss over 40 types of salt and their extraction methods, which are very similar to the processes still used. Presently, salt comes either from salt mines or from the sea. Most of today’s salt is mined from large deposits left by dried salt lakes throughout the world. However, the sea salt offered by Mountain Rose Herbs has been gathered from the Pacific Ocean and solar dried this is the more costly of the two processes. Salt is vital to good health, and it is required by the human body in order to function properly. Sodium functions as an electrolyte, and assists with regulating the electrical charges within our cells. Chloride supports potassium absorption, enhances carbon dioxide transportation, regulates body fluid levels, and is an essential component of digestive acids. Salt is a necessary element, and life itself would be impossible without it.

Sea salt is not as refined as table salt, and it still contains traces of other minerals, including iron, magnesium, calcium, potassium, manganese, zinc and iodine. Sea salt is thought to be healthier and more flavorful than traditional table salt, and many rave about its bright, pure, clean flavor. Sea salt is actually not as ‘salty’ as table salt, so recipes may have to be adjusted for taste. There is nothing more soothing, satisfying, and luxurious as a therapeutic soak with sea salt. At one time, high grade sea salts were only available at spas or in expensive bath care products, but now they are more widely available at affordable prices. Our solar dried sea salt is 100% natural, contains no additives, and has a high mineral content. It is for wonderful for softening and rejuvenating the skin, is a great exfoliant for sloughing away dry skin cells, relaxes muscular aches, pains, sunburns, rashes, and irritated skin. Elderberries have also been used to make preserves, wines, winter cordials, and to add flavor and color to other wines. Native Americans used the flowers, berries, and bark of elderberry trees to treat fevers and joint pain for hundreds of years, but elderberry's real claim to fame is as a cure for the flu. Israeli researchers have developed five formulas based on elderberry fruit that have been clinically proven to prevent and ameliorate influenza of all types. Extensive research shows that the elderly stop the production of hormone-like cytokines that direct a class of white blood cells known as neutrophils to cause inflammation, especially in influenza and arthritis.

On the other hand, older people increase the production of non-inflammatory, infection-fighting cytokines by up to 10-fold. Elderberries are known to be effective against eight influenza strains. This suggests that elders are more susceptible to flu vaccines in preventing flu because flu vaccines are only effective against known strains. In contrast, the virus is continually mutating into new strains. Vaccines have another drawback: over half of the people who get them report side effects. Dr. Madeleine Mumcuoglu, of Hadassah-Hebrew University in Israel, found that elderberry disarms the enzyme that viruses use to penetrate healthy cells in the lining of the nose and throat. Taken before infection, it prevents infection. Taken after infection, it prevents the spread of the virus through the respiratory tract. In a clinical trial, 20% of study subjects reported significant improvement within 24 hours, 70% by 48 hours, and 90% reported a complete cure within 3 days. In contrast, subjects receiving the placebo required 6 days to recover.

Note: According to the Botanical Safety Handbook*, the unripe and raw fruit, seeds, bark, and leaves contain a component, sambunigrin, which may cause vomiting or severe diarrhea if ingested.

In Magick, Elderberry is ruled by Venus and water. The flowers coat the mouth with a honey-like scent and a sweet taste. The name mullein is derived from the Latin word “mollis,” which means soft. It originates in the Mediterranean but has been naturalized in North America. The Greeks and Romans dried the flowering stem and dipped it in tallow to be used as a lamp wick or torch. This is how Torches, which are sacred to Hecate, were created. These torches were said to ward off evil spirits and witches, though mullein was not uncommon in a witch’s herbal garden. Its most common medicinal use was to ‘bring on a stalled period’, a euphemism for abortifacient. Despite these warnings, tansy is also used in cooking and, in small amounts, adds a spicy tang to salads akin to cinnamon or nutmeg. Cinnamon’s value during this time cannot be overstated. In the 1st century C.E., Pliny the Elder wrote that 350 grams of cinnamon was equal to 5 kilograms of silver, or about 15 times the value of silver per weight. Cinnamon comes from the Laurel tree, a tropical evergreen that grows at low altitudes and needs a moist, hot climate to thrive. Cinnamon bark comes in sticks, or quills. When peeled from the tree, they naturally roll up, are then threaded on a string, and air-dried indoors, as direct sunlight would dry them out too quickly and they would lose flavor.

The difference between sweet cinnamon and cassia cinnamon is quite apparent; sweet cinnamon quills will have a layered look to them, as if several were rolled together, while cassia will appear as one thick piece of bark. Sweet cinnamon is also lighter in color and, as the name implies, sweeter in flavor. Cinnamon quills have a long, almost indefinite shelf life, whereas cinnamon powder loses its flavor over time. Sweet cinnamon can contain up to 4% oil, including cinnamaldehyde, eugenol, and trans-cinnamic acid; however, it is usually lighter in oil content and sweeter-tasting than Cassia Cinnamon. It also contains phenolic compounds, tannins, catechins, calcium, iron, mucilage, resin, natural sugars, and traces of coumarin. Due to its incredible value, sweet cinnamon was used for centuries as a spice of the aristocracy and the wealthy.

During the Middle Ages, it was used as a meat preservative due to its antibacterial and antifungal qualities, and to mask the stench of “aged” meats more effectively than salt. When choosing cinnamon for your own use, be forewarned that the quills of cassia are next to impossible to grind, the flavor usually being extracted by boiling. Sweet cinnamon quills are much easier to use in any recipe and are quite easy to grind. Almost everyone knows the virtues of using cinnamon in baking, but there are many other uses being rediscovered or invented every day.

Cinnamon sticks are used in some cocktails as stirring sticks, and the also added to a traditional mulled wine recipe. Burdock's roots grow straight down as much as 3 feet (1M) into the subsoil. In mid-summer, the plant blossoms into a dense array of globular flowers with sticky bracts that cling to passing animals and people. Fenugreek is one of the base ingredients in curry powder and is used extensively in cooking throughout Asia. It is also used as a base for perfumes, soaps, and lotions, and in cooking, and is usually encapsulated for medicinal use, since the seeds are bitter. The powder has a sweet, nutty aroma, reminiscent of maple syrup, though the flavor itself is decidedly bitter.
